I had the pleasure of getting a full size sample of Colonial Bohea tea from Oliver Pluff & Co and it is a smoky black tea blend.
Since smoky flavors are not everyone’s “cup of tea” (see what I did there?), myself included, there are fun things to do in the kitchen with tea besides drinking it. Today, I did a new thing with this tea. Tea-smoked chicken! Y’all...I am so pleased with how it turned out! I “smoked” chicken breast in my slow cooker! I’ve seen recipes, but I decided to do my own thing (shocker). Super simple. Let me break it down for you:
I used my pressure cooker on the slow cooker setting. In my large metal infuser, I added a hefty tablespoon of Colonial Bohea tea, a pinch each of rosemary, thyme, and sage, and set it in the center of my insert pot. I piled four chicken breasts around it, added a little water, and a scoop of vegetable bouillon paste. I set it to pressure cook just until it was about to seal and then switched to slow cooker for an hour. It is PERFECT! Tender, juicy, and a nice color from the tea. The flavor is absolutely delicious!
Full disclosure: I can do a little smoked turkey, hot out of the box and I don’t mind a lightly smoky brisket. However, as a rule, I just don’t love smoky flavors. But, THIS. This makes me kind of love it. And, it’s not the phony smoke flavor you get from the liquid additive; this taste like it was smoked for hours over hardwood chips on a fancy outdoor smoker.
Moral of the story: never give up on tea! No tea goes to waste! If you find a tea that is not your favorite, hit the googles and find a recipe. Tea is a fun ingredient for cooking, baking, and even bath and body products!
